Tradicional Brut Nature

Production: The bunches arrive whole at the cellar and, before passing all the grapes over the selection table, a separate soft pressing is done of each variety. We use the Inertys technology in our presses which protects the juice from oxidation during the pressing phase. In winter we do the assemblage of the different varieties, the bottling and afterwards the second fermentation in the bottle.

Aging: A minimum of 50 months in the bottle. Every year there is poignettage (shaking the bottle), which causes the yeasts to mix again with the wine. In this way the sparkling wine is enriched in aromas and flavors. It is a Brut Nature without the addition of sugars. The date of disgorging is indicated on the back label.

Tasting note: Yellow straw color. Clean, transparent, fine and constant bubbles with rosary formation. In the nose the pear stands out as white fruit on a well-marked note of pastry, white flower, pastry cream, candied fruit. Fresh and delicate mouth entry. Presence of fresh herbs, white flowers stand out with notes of brioche and cream making a very pleasant end of mouth. Powerful, flavorful, good acidity, fine bead, bread dough, excellent on-the-lees fruit expression, almond, good balance and length.

Raimonda

Production: Fermentation of the wine in stainless steel tanks, traced three times a day. In the production of Raimonda only the flower or bleeding wine is used. Subsequently the malolactic fermentation takes place in concrete tanks. After blending the two varieties, the wine is aged in French oak (allier and vosgues) and American barrels for 12 months. Bottled and aged for two years.

Presentation: 75cl, Magnum i Jeroboam.

Tasting note: Intense red wine, of plum colour and purple edging, clean and dense in glass. The nose has deep aromas, in a range of black fruits, such as blackberries, blueberries, blackcurrant, accompanied by a pleasant fragrance of rosemary. With subtle species like vanilla and cinnamon, mixed with light dairy notes. On the palate, the entrance is friendly. Its delicate step of tannin, lets glimpse an acidity still present, that goes of the hand of some final herbaceous notes. These open again the aromatic range of black fruits, accompanied by balsamic touches and ageing, which brings back memories of tobacco.

Gran Crisalys

Production: The grapes pass through the sorting table and are then gently pressed in pneumatic presses. Only the first fraction of the pressing (also called “mosto flor”), the highest quality, is used. We use Inertys technology in the presses to protect the must from oxidation during this phase. Fermented and aged in oak barrel and battonage. Aged in bottle.

Tasting Note: Old gold coloured white wine with golden green reflections, clean and transparent, with a medium density in the glass. The nose gives off clean fragrance, with white flowers and ripe vine fruit, on a penetrating mineral aroma. In the mouth it is enveloping, with a firm and balanced step, and with an apple touch and an unctuous memory of pastries. Vegetable finish, it is a complex and pleasant round wine.
