The 2025 harvest: a harvest for hope
The 2025 harvest, the 75th since we started to make the first bottle of sparkling wine
After three years of extreme drought that very greatly reduced the production and took the vines to a water stress never seen before, “the 2025 harvest will be remembered as the harvest of hope” in the words of our head of viticulture Quim Isart. We have collected more than 800 litres per square metre of rainwater on our Can Martí Estate in the period between the end of the harvest last year to the beginning of the current one, much more than the average in our area.
The 2025 harvest started on 11th August, at 04:30 in the morning, in the dark, as we have been doing over the last few years, and finishing at 13:00. In this way we avoid the hours of maximum sun and protect the harvesters from the high temperatures but also achieve an energy saving as the grapes enter the cellar at a lower temperature and require less energy to cool them. Besides, following the path of sustainability, we have been generating electricity from solar panels installed on our roofs. The harvest of the 11 varieties on the estate finished on 15th September after 35 days of work.

The grapes on the Estate, as always, are harvested by hand, collected in 25kg boxes, pallets of 250kg or small trailers, each plot done separately. The grapes are transported rapidly as the whole vineyard surrounds our country house which is where the pressing centre lies. In the words of Paco de la Rosa Torelló “thanks to the rains received and the perfect climatological conditions at key moments, we have obtained an increase in production of 20% compared to the last few years along with an impeccable sanitary condition, probably the best harvest in the last 15 years.”

We have not had any plague or fungal attacks, we only, as always, have to watch closely the wild boar with the electric “shepherds” (fences). This campaign we want to add value to the Grenache variety that is called to gain importance in our cellar. It is a very versatile variety, and we vinify it for rosé and red wine but also for Corpinnat base wine.
Oenologically, according to our oenologist Marc Martin, “ideal acidity and Ph, fresh wines with very good fruity and floral aromas, very good colour, a lot of qualitative potential and base wines for Corpinnat with a great potential for aging.” It should be highlighted that, if in previous years we had started to do tests with pressing whole bunches, without destemming them, in this harvest we have increased the quantity of this type of pressing as we obtain cleaner musts, with less oxidation and with a better varietal expression.

Oenology team of Torello Viticultors
A special thanks to the Torelló viticulture and oenology team who, once again this harvest, have made an enormous effort in a year when we are also celebrating the 75th anniversary of our first harvest dedicated to sparkling wine and 630 years of winemaking tradition at our Can Martí Estate.
